When we think of Greek cuisine, gyros definitely make the list; they are a true symbol of Greek street food. Although traditionally made with lamb or pork, our version features, you guessed it, chicken. :)

Preparation process

In a bowl, mix the Greek yogurt, salt, garlic, sweet paprika, pepper, and parsley. Add the chicken and mix well. If you have time, let it marinate for one or two hours.

Cut out the central, larger part of the onion and skewer two kebab sticks through it. Thread the marinated meat onto the sticks. If you have a smaller amount of meat, during cooking the meat probably won’t slip off the softened baked onion. However, if you’re making a larger batch than I am, you can also simply lay the skewered meat on baking paper.

Bake it in a preheated oven at 200°C for about an hour. During cooking, turn it over and baste with the juices.

Partially peel the cucumber, grate it, and season with salt. Let it sit, then squeeze out the excess liquid. Mix it with the remaining tzatziki ingredients and store in the refrigerator.

Remove the cooked meat from the oven and cover with aluminum foil to keep warm. Meanwhile, fry or bake the fries.

Slice the meat, as well as the tomato and onion.

Stuff the pita with tomato, onion, meat, and fries, and finish with tzatziki sauce. Serve wrapped in foil so that the gyros are easier to eat. I tied them with a string purely for a nicer presentation.
